The secret of every indian delicious dish is the combination of grinded spices unfolding their flavor while merging  into the ingredients.

 

Just to mention some of them, which are mostly used:

bay leaves, gloves, cinnamon, cardamon, coriander, cumin, turmeric ....

And yes, we do use chilli, pinchwise, according to the european tongue.
